Fruit Butter Tarts

  • 2 cups flour
  • 1¼ t. baking powder
  • ½ cup confectioner's sugar
  • Any of the Pepper Patch Fruit Butters
  • 1 cup butter
  • ½ t. salt

Cream sugar and butter. Sift flour with baking powder and salt. Add to first mixture. Add vanilla. Shape into one inch balls and put on greased cookie sheet. Make a deep dent in each with thumb. Fill with ½ t. of any of the Pepper Patch Fruit Butters. Bake in a 350º oven for 20-25 minutes until a delicate brown. Remove from oven and add more fruit butter to each tart if needed. Makes approximately 50 tarts.

Strawberry Butter Coffee Cake
(Also delicious with Blackberry, Spiced Apple, Raspberry, Blueberry or Peach Butters)

  • 1 cup flour
  • ¼ cup butter
  • 1 egg
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • 1 (3 ounces) package cream cheese
  • 1 teaspoon vanilla
  • ½ jar (about 5 ounces) Pepper Patch Strawberry Butter
  • 2 ozs of sliced almonds

Preheat oven to 350F.

Grease and flour an 8-inch square pan. combine all ingredients except Pepper Patch Strawberry Butter. With a hand mixer, blend at low speed until moistened. Beat 2 minutes at medium speed. Spread batter into prepared pan. Spoon Pepper Patch Strawberry Butter by the teaspoon over the batter. Using a knife, swirl butter over the batter to marbelize. Bake in preheated oven for 25-30 minutes. Cool slightly.

Frosting:

  • ½ cup powdered sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon butter, softened

In a small bowl, combine all frosting ingredients except almonds; beat until smooth. Frost warm cake; sprinkle with almonds. Serve warm. Makes 12-16 servings.

Peach Butter Tea Cakes
(Also delicious with Strawberry or Raspberry Butter)

  • 1 ¼ cup flour
  • ¼ cup sugar
  • 1½ teaspoon baking powder
  • ¼ teaspoon salt
  • ½ cup butter or margarine, softened
  • 3 oz. pkg. cream cheese, softened
  • ½ cup coconut (optional)
  • ½ cup Pepper Patch Peach Butter

Frosting:

  • 1½ cup powdered sugar
  • ½ cup Peach Butter
  • 1 tablespoon butter or margarine

Preheat oven to 350º F

In a large bowl, combine flour, sugar, baking powder and salt. Cut in butter and cream cheese until mixture is crumbly. Add coconut and Peach Butter, blend well. Drop by rounded teaspoonfuls onto ungreased cookie sheet. Bake 15 to 18 minutes.

In medium bowl, beat all frosting ingredients until smooth. Frost cooled cookies; allow frosting to set before serving. Makes about 3 dozen cookies.
